Wider and deeper than a classic gnocchi board, Malloreddus boards allow you to roll small pieces of pasta dough and create grooves that catch and hold sauce. Semolina and water Malloreddus pasta originates from Sardinia, and they use these boards to shape and roll the curved pasta. We used these boards in our Hand Formed Pasta Class.
